If you are using an oak log, it take about 5 minutes to turn into charcoal. Birch logs take about 4 minutes, spruce logs take about 3 minutes, and jungle logs take about 2 minutes.

In a pinch, you can also use Netherrack as fuel for the furnace to make Charcoal. It will take a little bit longer than if you were using wood, but it will work in a bind.
